  • 2 piece sweet potato (cubed)
  • 1 cup chickpeas (cooked)
  • 4 cup kale (massaged)
  • 3 tablespoon tahini
  • 2 tablespoon lemon juice
  • 2 tablespoon olive oil
  • 2 clove garlic (minced)

Instructions

Preparation (25 minutes)

Cook quinoa. Chop vegetables. Preheat oven to 425°F.

Cooking (35 minutes)

Roast vegetables. Prepare dressing. Assemble bowls.
